Yves Courveur Mémoire Cuvée – Champagne, France

This elegant cuvée is made from 60% Chardonnay, 30% Pinot Noir and 10% Pinot Meunier, giving a nice balance of freshness, depth and finesse. Mémoire is aged for a minimum of 36 months on the lees (sur lie), giving it a silky structure, fine persistent bubbles and a depth rarely found in champagnes in this price range.

In the glass it appears with a beautiful golden color and a vibrant mousse. The aroma is elegant and nuanced with notes of white flowers, green apples, ripe pear and a discreet minerality. In the mouth it opens up to a fresh and vibrant taste with clear impressions of citrus, Granny Smith apples and a touch of hazelnut and vanilla. The aftertaste is long, creamy and slightly salty note – characterized by the fine minerality and complexity from the aging.

The champagne has an alcohol percentage of 12.5% ​​and a dosage of 6 grams of sugar per liter, which places it in the brut category.
