2020 Rudolf May Silvaner Der Schafer

The vines from which grapes for Silvaner "Der Schäfer" come were planted in 1969.
In harvest year 2020, the yield was 30 hl/ha.
After 24 hours of maceration, the pressed must was placed in a new double barrel (2,400 litres). Here it was mixed with natural yeast, fermented and then left on full yeast for 9 months.
Nutty, creamy, lots of minerals paired with a long and slightly salty finish.
